TACHIN: BAKED SAFFRON RICE WITH BARBERRIES

If you are having rice plainly, you’re doing something wrong! 

This baked delicacy with rice, barberries and flavours of saffron, is a perfect treat to have or offer. With Pride of India’s Indian Golden Basmati Rice, this dish becomes healthier, tastier and fulfilling!

WHAT YOU NEED 

HOW TO MAKE 

  • Boil the basmati rice with half cup of salt.
  • Cook barberries while stirring it often in the melted butter for about 2 minutes.
  • Combine grounded saffron and 2 tbsp hot water in a large bowl and let the saffron colour draw out.
  • Mix the egg yolks, salt, oil and yogurt in the bowl.
  • Add the boiled rice to the yolk mixture and toss until every grain is coated.
  • Take a baking dish and coat it with oil. Add the rice mixture to it and pack the contents compactly.
  • Scatter the barberries on the top, pack and bake until the rice are golden brown. 
  • Let it cool and invert the rice on a plate.
Your baked rice delight is ready to eat and serve - Delicious!!
