  • Gradually mix the  wet ingredients into the dry ingredients, whisking constantly until the batter is smooth and free of lumps. Let the batter rest for about 15-20 minutes to allow the rice flour to hydrate.
  1. Cook:
  • Heat a pan over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of the batter onto the center of the pan and quickly swirl the pan to spread the batter evenly into a thin layer.
  • Cook the crepe for about 1-2 minutes, or until the edges start to lift and the surface is set. Carefully flip the crepe with a spatula and cook for another 1 minute, until lightly browned.
  • Repeat with the remaining batter, greasing the pan as needed.
  1. Serve:
  • Once the crepes are done, you can serve them warm with your favorite fillings such as fresh berries, whipped cream(or vegan whipped coconut cream), bananas, or a dusted powdered sugar.
