  1. Boil the Eggs in water for 10-12 mins.Once cool, peel the shells.
  2. Slice eggs in half lengthwise and scoop out the yolks into a bowl. Mash yolks with mayonnaise,mustard and breakfast seasoning until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Garnish with parsley for a decorative touch.
  5. Chill the mimosa eggs briefly before serving.

2. QUINOA BLACK EYED BEAN SALAD

  1. Rinse and soak the red quinoa and black-eyed peas for a few hours. Cook the red quinoa for 15–20 minutes until tender and the black-eyed peas for 30-45 minutes until soft. Set them aside to cool.
  2. In a large mixing bowl, combine the onions, cherry tomatoes, boiled corn, and jalapeños. 
  3. Sprinkle your favorite spices and Pride of India’s Breakfast Seasoning over the veggie mix. Add lime juice, olive oil, and black chia gel to the bowl and stir thoroughly. 
  4. Finally, add the cooked quinoa and black-eyed peas to the mixture, and gently toss until well combined. Garnish with freshly chopped cilantro and serve immediately.

3. Tikka Curry LambMeatball Meal

Meatballs are an important part ofNew Year Eve food, offering a satisfying bite perfect as ameatball appetizeror paired with dips or a wholesome plate of basmati rice. Let’s elevate your New year with these special Tikka Curry Meatballs! These flavorful lamb meatballs, drenched in a creamy Tikka curry sauce, are made with ease using our 16-spice mix, and will have your guests licking their fingers.

Ingredients:

For the Meatballs:
  • 1 lb ground lamb 
  • 1 tbsp Pride of India’s Tikka Curry Masala (blend of 16 spices)
  • 1 egg, lightly beaten (to add moisture)
  • ½ cup Pride of India’s Rice Flour (or breadcrumbs, optional, for binding)
  • 2-4 tbsp olive oil (for frying)
  • 2 tbsp fresh parsley or cilantro, chopped
  • ½ tsp Himalayan white salt
For the Tikka Masala Sauce:
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 2 tbsp Pride of India’s Tikka Curry Masala
  • ½ cup tomato puree
  • 1 cup heavy cream
  • Pride of India’s Himalayan Pink Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Directions

Make the Meatballs
  • In a large bowl, combine the ground lamb, Tikka Curry Masala, beaten egg, rice flour (or breadcrumbs), chopped parsley, and salt. Mix everything well.
  • Form the mixture into small meatballs.
  • Heat olive oil in a skillet and fry the meatballs for about 5-7 minutes on each side until golden brown. Remove and set aside.
Make the Tikka Curry Sauce
  • In the same skillet, add 1 tablespoon of oil. Sauté the onion until golden brown. Stir in the Tikka Curry Masala and cook for 1-2 mins until fragrant.
  • Add the tomato puree and simmer for 5-10 mins, allowing the sauce to thicken.
  • Stir in the heavy cream and salt, and continue to cook for an additional 3-5 minutes.
  • Add the cooked meatballs to the Tikka Masala sauce and coat them with the sauce. Add water if desired for consistency.
  • Let the meatballs simmer for an additional 5 mins then garnish with chopped cilantro.

Ingredients:
  • 1 cup Pride of India’s white rice flour
  • 1 cup milk (adjust for batter consistency)
  • Pinch of Himalayan pink salt
  • 1 tbsp butter, melted
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract (optional)
Directions
  • In a blender, combine the rice flour, milk, salt, sugar, and vanilla extract. Blend until smooth and lump-free.
  • Heat a crepe pan or non-stick skillet over medium heat and lightly grease it with melted butter.
  • Pour about 1/4 cup of batter into the center of the hot pan. Quickly swirl the pan to spread the batter into a thin, even layer.

  • 3 ripe bananas, mashed
  • 5 tbsp sugar
  • 1 egg (or flaxseed egg for a vegan option)
  • ¼ cup melted butter

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together rice flour, baking powder, baking soda, black chia seeds, and salt.
  3. In another bowl, mix mashed bananas, sugar, egg, and melted butter until smooth.
