Gluten-Free Christmas Cookies 

Today, we’re makinggluten-free Christmas cookies with white rice flour that you’ll fall in love with! With the perfect balance of ingredients, these cookies are crisp and beautifully decorated with simple sugar icing. They’re perfect on their own or paired with cozy lattes, teas, or coffee for a delightful experience.

Ingredients:

Directions 

  • Preheat and Prepare:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients:
    In a bowl, whisk together the brown rice flour, arrowroot powder, and Himalayan pink salt. Set aside.
  • Cream Butter and Sugar:
    In a large mixing bowl, beat the softened butter and coconut sugar together until light and fluffy.
  • Add Wet Ingredients:
    Mix in the vanilla extract and egg or vegan egg. Add water or milk and stir until smooth.
  • Combine and Fold:
    Gradually add the dry ingredients into the wet mixture, stirring until the dough comes together. 
  • Roll the Dough:
    Roll the dough on a flat surface and cut out your favorite shapes with cookie cutters, such as candy canes, stars, bells, mittens, snowman and Christmas trees. Alternatively, you can keep the cookies round if you prefer.
  • Shape and Bake:
    Place the dough shapes onto the prepared baking sheet, leaving some space between each cookie.
  • Bake:
    Bake for 12-15 mins until the cookies are lightly golden around the edges.
  • Cool and Enjoy:
    Let the cookies cool for 5 minutes before transferring them.

  • Crush the Rock Sugar:  Grind the natural Rock Sugar into a fine powder, which will serve as your confectioner's sugar, using a food processor or grinder.
  • Mix Butter and Milk Powder: In a bowl, mix the crushed sugar and softened butter with the reconstituted milk powder until creamy.
  • Add Food Coloring: Add food coloring to achieve your preferred icing color, if desired.
  • Decorate the Cookies: Once the cookies have completely cooled, use a spoon or piping bag to drizzle or spread the icing over the top. You can create fun patterns or simply cover the cookies with a smooth layer for a sweet finish. Add colorful sprinkles, chocolate chips or other edible decorations to enjoy the icing creativity of this process to make your cookies look more appealing.
